ISO 6885:2016 spécifie une méthode de détermination de l'indice d'anisidine qui correspond à un mesurage de la quantité d'aldéhydes (principalement des aldéhydes a, ß insaturés) présents dans les corps gras d'origines animale et végétale.
Le lait et les produits laitiers (ou les corps gras issus du lait et des produits laitiers) sont exclus du domaine d'application de la présente Norme internationale.
