Specifies the principal performance requirements of hot food storage devices and sets out procedures for determining heat-up times and operating temperatures. Also includes requirements and recommendations for the design, construction and markings, and for the information to be provided regarding guarantees. Specifically intended for commercial devices such as bains-marie and warming ovens, but also applicable to household devices.
Scope
This Standard specifies requirements for the design, construction, performance and marking of commercial equipment with electrical heating for the storage or display of hot food for a period exceeding 15 min, prior to serving or sale for human consumption.
NOTE: The units to which this Standard applies are designed to keep preheated food hot, not to heat food to the correct temperature. Food must be above the minimum temperature when placed into the unit.
Equipment for household use is also covered by this Standard with regard to construction materials and operating temperatures.
